All it takes is the best cheese from Wisconsin and a full 24 months of aging in California. The patience pays off, though. Ellie’s Vintage 2-Year Blue from Shaft’s Cheese & Co. is perfectly balanced, creamy, and sweet with the signature blue tang.

Who doesn’t love a good mashup? With this one, you really can’t go wrong! Shaft’s 1-Year Aged Blue combined with a 1-Year Aged Cheddar makes for a unique pair that will bring the wow factor no matter how you use it!

Finally, hand-stuffed quality blue cheese olives right out of the package! Our naturally-cured jumbo olives are filled with 100% Shaft’s 1-Year Aged Blue Cheese, creating the perfect addition to your martini, charcuterie board, or appetizer plate.

Did you know that all of Shaft’s cheese comes from Wisconsin? When our founder went on a mission to find the best blue to age, he found it in the State of Cheese! There might be a little feud between Wisconsin Cheese and California Cheese, but we like to think that we bridge the gap well. Our facility in California is technically an affinage, which is a pretty fancy way of saying we take cheese and add a little something special. For us, that’s aging our cheese in the same conditions that were originally used in the mine shaft!
