Earlier this year, we met some folks from the American Ostrich Farm. Yep, you read that right – ostrich. They filled us in on how ostrich is a viable red meat-alternative that has the benefits of poultry, but cooks like beef! We needed to try it out for ourselves. But, of course, we couldn’t do something standard. Instead, we took a swing at what some have called the “Ohio Nachos” (hey, our marketing manager is from Ohio, what can we say). A stack of kettle chips, alfredo sauce, and blue cheese make for a cheesy and creamy, yet sophisticated snack or appetizer. We decided to up the game by adding some of the ground ostrich on top as well, turning this into a full-blown premium nacho. Or, as we like to call it – Blue Ostrich Nachos.
Ingredients:

- Shaft’s 1-Year Blue
- Ground Ostrich from American Ostrich Farm
- Kettle Chips
- Alfredo Sauce (store bought or homemade)
- Green Onion (for garnish)
Steps:
- Brown ostrich meat in a skillet over medium heat.
- While meat is cooking, make or heat up alfredo sauce
- Assemble nachos by layering kettle chips, sauce, blue cheese crumbles and ostrich.
- Top with green onion and serve!
