Harvest Salad

You know those tricky in-between-season months? Those ones where you’re excited for fall, but summer is still holding on tight? Pumpkin Spice is starting to show up everywhere, but we’re still drinking cold brew in the morning (that’s why they invented the Pumpkin Cream Cold Brew, I think).

Well, think of this salad as the meal equivalent to that. We’re not in soup season yet, but we are really excited to get there. We don’t quite have the deep fall produce, but these end-of-summer gems are ripe for the picking (hellooo pear season!). This Harvest Salad combines some of your favorite fall flavors, like sweet maple and creamy blue, with juicy pear and mixed greens for that fresh summer taste! It may be simple, but we love a good stand-by recipe! Cheers!

Ingredients:
  • 6 cups mixed greens
  • 2 ripe Bartlett pears, sliced
  • ½ cup candied pecans, chopped
  • ¼ cup dried cranberries
  • 4 oz Ellie’s 2-Year Blue, crumbled
  • ¼ cup maple-balsamic vinaigrette
    • 2 tbsp balsamic vinegar
    • 1 tbsp pure maple syrup
    • 1 ½ tsp Dijon mustard
    • ¼ tsp kosher salt
    • ⅛ tsp black pepper
    • ¼ cup extra-virgin olive oil
Instructions:
  1. Add vinaigrette ingredients to a mason jar.
  2. Shake to combine.
  3. Add mixed greens, sliced pears, chopped pecans, cranberries, and crumbled blue to a bowl.
  4. Drizzle with maple-balsamic vinaigrette before serving!
