Handheld Wedge Salad

Crisp, cool, and totally craveable — these Handheld Wedge Salad Bites are our fresh take on a classic. Mini heads of gem lettuce stand in for the usual iceberg, making the perfect base for a crumble of Shaft’s 1-Year Blue, crispy bacon, and a burst of sweet cherry tomato. They’ve got all the flavor of a steakhouse wedge, but in appetizer form — no fork, no fuss, just a big punch of creamy, tangy, smoky goodness. Perfect for holiday gatherings when you need something bright and fresh to balance out all the cozy.

Ingredients:
  • Baby Gem Lettuce
  • Shaft’s 1-Year Aged Blue
  • Mini Cherry Tomatoes
  • Bacon
  • Blue Cheese Dressing
    • 1/4 cup mayonnaise

    • 1 tablespoon minced parsley
    • 1 tablespoon fresh lemon juice, optional
    • Pinch fine sea salt
    • Pinch fresh ground pepper

  3. Remove individual leaves of the baby gem lettuce and rinse with cold water. Pat dry with paper towels.
  4. Crumble cooked bacon pieces into the baby lettuce leaves. Sprinkle crumbled blue cheese and top with a few mini cherry tomatoes.
