Crisp, cool, and totally craveable — these Handheld Wedge Salad Bites are our fresh take on a classic. Mini heads of gem lettuce stand in for the usual iceberg, making the perfect base for a crumble of Shaft’s 1-Year Blue, crispy bacon, and a burst of sweet cherry tomato. They’ve got all the flavor of a steakhouse wedge, but in appetizer form — no fork, no fuss, just a big punch of creamy, tangy, smoky goodness. Perfect for holiday gatherings when you need something bright and fresh to balance out all the cozy.

Ingredients:
- Baby Gem Lettuce
- Shaft’s 1-Year Aged Blue
- Mini Cherry Tomatoes
- Bacon
- Blue Cheese Dressing
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 ounces of Shaft’s 1-Year Aged Blue, crumbled
- 1 tablespoon minced parsley
- 1 tablespoon fresh lemon juice, optional
- Pinch fine sea salt
- Pinch fresh ground pepper
- Milk to thin (optional)
Instructions:
- Make the blue cheese dressing by combining ingredients in a food processor. Add milk, one tablespoon at a time, to thin to desirable consistency.
- Cook bacon
- Remove individual leaves of the baby gem lettuce and rinse with cold water. Pat dry with paper towels.
- Crumble cooked bacon pieces into the baby lettuce leaves. Sprinkle crumbled blue cheese and top with a few mini cherry tomatoes.
- Drizzle with dressing.
- Serve and enjoy!
