Sweet, savory, and just a little bit fancy — that’s how we like our holiday bites. These TooGood Blue Sweet Potato Crostinis are the perfect blend of cozy and classy. The caramelized edges of roasted sweet potato meet the lush, port-infused bite of our TooGood Blue, finished with honey and thyme for a snack that feels like it should come with a fireplace and a glass of red.

Ingredients:
- Sweet Potatoes
- Shaft’s TooGood Blue
- Fresh Thyme
- Honey
Instructions:
- Preheat oven to 425°F
- Slice sweet potatoes into thin rounds
- Lay out on baking sheet in a single layer, drizzle with olive oil, and sprinkle with salt and pepper
- Bake for 20-25 minutes, flipping rounds 1/2 way through
- Once to desired doneness, remove from oven and allow to cool for a few minutes
- Cut or crumble pieces of Shaft’s TooGood Blue and add to the tops of the baked sweet potato rounds
- Add a pinch of fresh thyme to each round and drizzle with honey!
- Serve and enjoy!
